This midsummer salad is full of colors and flavors, really though, it hits all five of the main tastes sweet, salty, sour, bitter, and umami. Combining these different tastes creates a more balanced and complex flavor. With the sour (lemon, thin edible slices in addition to the drizzled juice), sweet (cherry, honey) and bitter (arugula) balancing each other out while the salty (salt) and umami (walnut) help round out the flavor. Midsummer Salad
Ingredients
- 100-150 gr Arugula/Rocket
- 4 medium stalks of Swiss Chard
- 5-10 Cherries
- 8-10 full pieces Walnuts
- 1 small Tomato
- 1 small Cucumber Persian
- 1 small Shallot
Sauce
- 1 small Lemon for squeezing and adding thin slices to top off the salad
- Honey for drizzling
- Olive Oil for drizzling

Mise en Place (The Set Up)
- Dice the tomato, cucumber and shallot,
- Roughly Chop the arugula, swiss chard and walnuts
- Roughly Slice the cherries
- Thinly Slice half of the lemon
